pears I love prosciutto because it is so easy to work with, and always ready to be used. I buy by prosciutto from the deli department of my supermarket. I ask them to slice it super thin so it won’t be as salty, and I can get my money worth! After all I am only using it for appetizers again this time!

 

 

 

 

 

Pears wedges rolled in prosciutto:

Ingredients:

  • 5 firm pears, but ripe
  • 2 tsp of lemon juice
  • 1/2 tsp of salt and pepper
  • arugula bag
  • 15 thinly sliced prosciutto slices
  • 1/2 cup shaved parmesan cheese
  • 2 tbsp of balsamic vinegar

Preparation:

  • wash and cut your pears in halves
  • using a melon baller, take the core out of the halves
  • cut in wedges, you should have about 15 wedges of pears
  • in a salad bowl, toss the pear wedges with the lemon juice, salt, and pepper
  • on a flat surface, place your slice of prosciutto, then your pear wedge, a few sprigs of arugula, sprinkle some parmesan cheese, and drizzle some balsamic vinegar
  • start rolling your pear wedge with the prosciutto and all the goodies in the middle
  • repeat with the other wedges

You can prepare this appetizer as early as 4 hours in advance. Just cover the wedges with some saran wrap so the prosciutto does not dry off. Store in the fridge before serving.
