Scones are biscuit-like quick breads. Scones originated from Scotland. Scones are richer than regular biscuits because they contain eggs, butter, cream or sour cream. To have perfect light, tender, and flaky scones, your butter needs to be in small pieces and cold when it is added to the flour mixture. To cut your butter, just freeze the butter stick, then using a coarse shredder, shred your butter then add it to the flour immediately.
Dried Cherry Scones:
Ingredients:
- 1/2 cup of dried cherry, roughly chopped
- 2 cups of all purpose flour
- 2 tbsp of brown sugar
- 2 tsp of baking powder
- 1 pinch of salt
- 1/2 tsp of baking soda
- 1/4 cup of butter
- 1/4 cup of finely shredded orange peel
- 1 egg yolk, beaten
- 1 carton of dairy sour cream (8 ounces)
Preparation:
- in a small bowl, pour some boiling water into the dried cherries so they plump up. Just enough water to cover the dried cherries
- let it soak for 5 minutes, then drain
- in another large bowl, combine the flour, brown sugar, baking powder, salt ,and baking soda.
- coarsely shred your butter, like explain above in my paragraph
- combine the butter and the dry ingredients, mix well
- finely shred the peel of an orange
- add the plumped dried cherries, and orange peel to the mixture
- make a well in the middle of the flour mixture
- in a small bowl, combine egg yolk and sour cream
- pour the egg yolk and sour cream mix in the center of the flour well
- using a fork, gently stir in the flour into the yolk (mixture will look dry)
- lightly flour a flat surface, take the dough out of the bowl, and start kneading
- knead the dough by making gentle 10 to 12 strokes, until the dough is nearly smooth
- roll the dough into 7 inch circle
- cut circle into wedges, it is starting to look like scones shape
- preheat oven to 400 degrees
- put the wedges of dough onto a baking sheet
- bake for 10 to 12 minutes, until it is light brown
- cool the scones onto a wire rack
Serve your scones with tea. Scones during breakfast time is very filling. You can heat it up a little bit in the microwave, and it is sure to be a big hit with your kids.
