So if you have nothing to do and want to splurge on a homemade dinner, here’s one thought! I made Banh Xeo on Sunday night!
Banh Xeo is a vietnamese crepe filled with thin sliced pork, shrimps, mushrooms, bean sprouts, and mung beans (by preference), cooked in a pan to perfection. Once that’s done, you take a few lettuce, mint leaves, cilantro, and sour leaves, wrap a piece of your banh xeo, and voila. Dunk it in freshly prepared fish sauce, and you made yourself a delicious roll of banh xeo. Beware, this can me messy for the inexperience wrapper! My husband chooses often to put the whole crepe into a bowl, shred some lettuces and mint leaves and whatever comes in the leaves dish, some fish sauce, and eat it in the bowl! No wrapping needed…this is the modern version!
In all which ever way you eat Banh Xeo, it is as delicious as it sounds! Here are some pictures.
Ingredients needed to make Banh Xeo!
Clockwise: mixed greens, bean sprouts, thinly sliced pork belly, mushrooms, shrimps, onions, and batter
Frying my pork, shrimps, onions with vegetable oil

Added the batter, and bean sprouts. Can you see the crepe forming? Yum!
Had no lid big enough for my pan, so used another pan! Gotta be creative!
This is to steam up your bean sprouts! And it won’t burn the crepe!
Looking rather delicious at this point. Crepe is ready when it is crisp on the bottom
